Ingredients:80g unsweetened shredded coconut, plus extra for sprinkling
25g coconut oil
1½ tbsp maple syrup
½ tsp ground vanilla bean
a pinch of salt
1 tsp water
25g vegan dark chocolate
- Line a baking sheet with parchment paper. In a mixing bowl, combine all of the ingredients, apart from the chocolate.
- Using a small ice-cream scoop, shape the mixture into 10 or so balls, releasing them onto the lined baking sheet. Chill for at least one hour.
- Melt the chocolate and dip the balls in it until coated. Sprinkle with shredded coconut and chill in the refrigerator until ready to serve.
