Moroccan Pulse Salad

Quick Make Vegan Friendly

It really doesn't get any easier than this salad! Light, fresh and healthy, it's ideal served on its own as a light lunch or as a side salad along with your favourite Moroccan dishes. For a vegetarian version, you could also top it with your favourite cheese such as Feta.

Moroccan Pulse Salad Recipe: Live Green & Good

Ingredients:

400g Cooks & Co chickpeas, drained
200g Cooks & Co roasted red peppers, chopped
a small bunch of coriander, roughly chopped
a small bunch of parsley, roughly chopped
1 red onion, finely sliced
150g cherry tomatoes
1 tbsp olive oil
2 tbsp harissa paste
juice of 1 lemon

method:

  • In a bowl, mix together all of the ingredients.
